What happens with multi-sheet workbooks?

Only the first sheet exports. CSV is a single-table format, so the conversion (handled by LibreOffice) writes the workbook's first sheet only. If the data you need lives on another sheet, move it to the first position in Excel before uploading.

Do formulas and formatting carry over?

CSV stores plain values only, so formulas are replaced by their calculated results, and formatting, colors, merged cells and charts are dropped. That's exactly what most databases and import scripts expect.
