PDFs that contain real, selectable tables (bank statements, invoices, exported reports) extract most cleanly, since rows and columns are detected from the text layout. Data presented as free-flowing paragraphs or as charts will not become a structured table.
Not directly. A scan is just a picture, with no text for the converter to read. Run the file through the OCR PDF tool first to recognize the text, then convert the OCR'd result here. Column alignment in scans may still need manual cleanup.
No. A PDF stores only the printed values, not the formulas that produced them, so every cell arrives as plain text or a number. If you need the live formulas, you will need the original spreadsheet the PDF was exported from.
