Does the PDF stay editable as vector art?

In vector-aware software, yes. Paths, curves and embedded fonts carry over as vector data rather than a flattened image, so shapes can still be scaled or edited after conversion. Raster elements embedded in the original EPS, like placed photos, remain images inside the PDF.

What happens to embedded fonts?

Fonts embedded in the EPS file are carried into the PDF where possible, so text keeps its exact typeface without needing that font installed on the viewer's device. If a font wasn't embedded in the source file, that text falls back to a close system substitute.
